Do not be confused by true French Tarragon...many unsuspecting buyers end up with a Russian Tarragon, which is grown from seeds. True French Tarragon must be grown from cuttings taken in the spring. French tarragon is used to create vinegars and flavor fish, but is also commonly used to flavor vegetables and meats (things like shellfish, poultry, and lamb).
French tarragon is commonly used in the production of perfumes, Dijon mustard, and various other condiments. French tarragon is a source of calcium, niacin, potassium, thiamine, and vitamin A.
